This is so customizable! I used corn, bell pepper, asparagus, potatoes, and vidalia onions. It’s really all about that smoky paprika spiced olive oil that everything gets tossed in. You can easily cut and toss everything ahead of time and just dump it on a baking sheet to roast when you are ready to eat!
This chili was full of flavor! We were seriously fighting over the leftovers. It’s actually kind of embarrassing that I can’t seem to stop talking about this recipe. Obsessed.
