If I can have anything for breakfast it is almost always a freshly baked muffin. I will sometimes postpone breakfast until 10:30 just so I can bake a batch of muffins to have with my coffee.
A great muffin must absolutely be moist and not dry, have a crunchy, well browned top, and hold up well the next day.
